Barbecued Spare Ribs with Calvin Barden

This recipe could not be easier and the results are impressive. Served with rice, it’s also a very economical main course feeding 4 hungry carnivores for under £10. The main ingredients are 12 pork spare ribs and the condiments for the marinade….

Stage 1  - Grill the spare ribs for 15 minutes at a high temperature making sure that all sides are brown and bubbling.

Stage 2 – The marinade: Mix the following in a bowl:

  • 4 tablespoons clear honey
  • 3 tablespoons soy sauce
  • 3 tablespoons tomato ketchup
  • Tabasco or chilli sauce
  • 1 small clove garlic
  • Mustard powder
  • Paprika
  • Salt and Black pepper
  • Juice of one Small orange
  • 4 tablespoons wine vinegar

Stage Three - Baste and Bake for 30 mins at 180 C

Serve with special fried rice and an optional chilli sauce…. white wine goes well
