How to Make Bubble and Squeak
And they say the English can’t cook! Make yourself happy with this fantastic comfort food, a vegan version using cooked cabbage and mashed potato, a frying pan, salt, pepper, vegetable oil and ten minutes to spare
Recipe Ingredients:
- Half a cooked cabbage, usually hanging around in the fridge
- Mashed potatoes, equal to the cabbage in weight, again, they can have been sitting around for a couple of days in the fridge
- Sea salt
- Black pepper
- Vegetable oil
- A frying pan
Here is how to do it
Mix up the chopped, cooked, white cabbage and the mashed potatoes in a bowl or saucepan.
Season well – lots of salt and pepper
Put a good slug of vegetable oil in a 30cm frying pan over a medium heat.
Form the potato mixture into four flattish round blobs and put them in the pan, don’t wait for the oil to heat up, they can go straight in.
They will need about 5 mins on each side.
Eat immediately. A meal on its own or with any thingelse that is going!
