Pickled Rollmop Herrings

This recipe for rollmop herrings is from Hugh Fearnley-Whittingstall and it’s not for the squeamish. First Calvin will show you how to gut and fillet a herring and what to do with the insides. Then the herrings are soaked in brine. dried and finally marinated in a pickle for up to a month.
